This 250 calorie breakfast bowl is fullllll of calcium (almost 100% of your RDI), iron, vitamin a, vitamin c, healthy omega 3 fats, and potassium! 😍 It also has 13g protein, 10g fiber, and only 2g net carbs! 👏🏼 Eating a bowl of whole foods is also soooo fresh and delicious. 😋 Check out the details below – enjoy!
Fun fact – we foraged these mushrooms in the woods near our house! 🍄 but ALWAYS make sure you identify your wild mushrooms!!!! Or stick to buying them at the store 😆
3 C spinach
1 tsp avocado oil (or water if oil free)
1 C mushrooms of choice (I used golden oyster), sliced
1/4 avocado, sliced
1 TBSP golden flax seeds
1 TBSP hemp seeds
1️⃣ add spinach and a small amount of water to a saucepan over high heat. Cover and steam until wilted. Drain.
2️⃣ heat oil or water in a cast iron skillet over medium high heat. Add mushrooms and cook without stirring for 3-4 minutes. Stir and repeat until each side is a nice deep golden color.
3️⃣ add to bowl with seeds and avocado. I enjoy plain, but optional to add a squeeze of lemon or hot sauce of choice!
