Air-Fried Cauliflower l Makes 3 Tacos:
▫️1/4 head large Cauliflower, cut into florets
▫️1/4 Red Onion, cubed
▫️1 tbsp Traditional Tunisian Harissa
▫️1/4 cup Red Enchilada Sauce
▫️Salt & pepper
Spicy Jalapeno Avocado Sauce l Makes ~1.25 cups:
▫️2 large Avocados
▫️2 small/medium Jalapenos
▫️1 Serrano Pepper (can omit for less spice)
▫️1 small bunch Cilantro (including stems)
▫️1 medium Lime, juiced
▫️3-4 cloves Garlic
▫️1/4 cup Avocado Oil
▫️1 tsp Sea Salt
As well as:
▫️Crunchy Grain-Free Taco Shells
▫️Mexican Shredded Cheese
▫️Start off by prepping your cauliflower & onion. In a pan, add some olive oil & cook your onions on medium heat for 2-3 mins. Then add in your cauliflower. Cook for 5-6 mins until it starts to brown.
▫️Then add in your harissa, enchilada sauce, salt & pepper. Evenly mix & cook.
▫️Scoop everything out & into your air fryer. I love to use my ninjakitchen air fryer oven for this! Air-fry at 425* for 8 mins.
▫️Meanwhile, add all the ingredients for the sauce to a blender or food processor. Blend until creamy.
▫️Once your cauliflower is ready, grab a taco shell, fill with a layer of cheese & stuff with your cauliflower. Finally, top with your avocado sauce!
